

Mandi has been a Wedding cake maker and decorator for almost thirty years having been taught by her Grandmothers, Lavinia and Hilda Mary. Lavinia was an exceptional cake maker and baker and Hilda Mary a fine craftswoman and expert at royal icing techniques.
They also fascinated Mandi with the history and folklore of Wedding Cakes; did you know that according to superstition sharing the cake with relations and friends is sure to guarantee fortune and fertility? Or that ill-luck will befall the bride who bakes her own Wedding Cake? A morsel of cake sampled before the Wedding ceremony may lose a husband's love, but so long as the couple make the first cut together and every guest samples a piece they are assured of producing a family.

Some of the same superstitions remain today but techniques and cake decorating skills have evolved over the decades and following the introduction of pastillage and sugarpaste gums a whole new world of sugarcraft styles became possible. Mandi developed a fascination for producing delicate, realistic sugar flowers and foliage, preferring to work from fresh flower examples to faithfully replicate depth of colour and shading.

Eighteen years ago (seems like only yesterday?!) Mandi met David who's interest in sugarcraft developed at a phenomenal rate. There was a time when she could say that she had taught him every trick he knew but his overwhelming enthusiasm, dedication and painstaking attention to detail has led him to develop entirely different and innovative skills in sugarcraft modelling on a truly epic (occasionally terrifying) scale.
These two cake makers combined knowledge, interest in the latest techniques and ability to discuss each creation at great length (with only a few niggles) means they are able to offer an unrivalled service on every aspect of your Wedding cake.
In November 2006 Paul Cessford joined the company and in July 2007 Comrie Cameron also became a full time team member. There's often much laughter in the Rainbow Sugarcraft cake studio, (which is only occasionally hysterical) and these guys work really well together to perfect each creation.
Inspiration for Rainbow Sugarcraft cakes comes from many sources including nature, customers' backgrounds or lifestyles and the world of fable and fantasy. These cake decorators also owe much to the great cake makers and authors of modern times including the very talented Nadene Hurst, Debbie Brown and Alan Dunn.
David's motto for Rainbow Sugarcraft is 'Nothing's Impossible.'
Mandi's is 'Pride comes before a fall!'
